Chicken skewers with a rosemary and tomato sauce

  1. 550 g Tomato Blend
  2. 500 g chicken breast
  3. 2 tbsp ras el hanout spice mix
  4. 3 tbsp olive oil
  5. 1 packet of rosemary
  6. a few sprigs of fresh thyme
  7. 1 onion
  8. 1 garlic clove


1. Cut the chicken breast into cubes (don’t make them too small as they need to be big enough to put on a skewer), place them in a bowl, and sprinkle with the ras el hanout and tablespoons of olive oil. Rub the chicken with the spice mix until all of it is coated thoroughly and then put to one side.
2. Peel the onion and garlic and finely chop both. Remove the thyme leaves from the central stem.
3. Heat 1 tablespoon of olive oil in a frying pan and fry the onion and garlic until both are translucent. Add the thyme leaves and the Tomato Blend and simmer the sauce gently until it has thickened slightly.
4. In the meantime, skewer the cubes of chicken onto the rosemary needles. If this doesn’t work, use wooden skewers instead.
5. Cook the chicken skewers in a frying pan or on the BBQ until ready and serve with the tomato sauce.
